My family’s request for Christmas. Here are the recipes I like to use (not all in the same year!). Amounts in italics are for 12 adults and 5 little kids.
- Margaritas (regular, make 1 pitcher)
- Margarita di Diabolita: my own recipe (Make 2 pitchers)
- Carne Asada: Tyler Florence’s recipe on Foodnetwork.com (3 lbs flank steak)
- Instant Pot Shredded Chicken Tacos with the Avocado Sauce (adapted for my stovetop pressure cooker)
- Chicken fajitas (2-3 lbs chicken breast cutlets)
- Chicken Enchilada Casserole, Turkey Enchilada Casserole, but with chicken instead
- Pork carnitas from Nature’s Best (3 lbs is enough to have a little left over)
- Pressure cooker carnitas
- Refried beans (Crock Pot)
- Mexican rice (Make 1.5 recipes, use Uncle ben’s converted rice for best results.)
- Mexican-Style Slaw with Jícama, Cilantro, and Lime – new favorite in 2019
- Coleslaw with Cumin-Lime Vinaigrette
- Guacamole: buy avocados several days ahead – 1/2 avocado per person
- Tortillas: 2 dozen El Milagro corn, 2 dozen El Milagro flour
- Shredded cheese, Mexican blend from TJ’s, one 12oz. bag is enough
- Whole bunch of limes (more than you think you’ll need; we used 20 in 2018, including three pitchers of margaritas)
- Christmas cookies and ice cream (peppermint and vanilla)
Day before serving:
- Bag some ice to make room for the ice-maker to make more
- Make marinade for carne asada and/or pollo fajitas
- Make refried beans
- Make enchilada casserole
- Make carnitas if making from scratch
