Use homegrown tomatoes in season. Serve on lightly toasted bread rounds.
- 3 c. chopped fresh plum tomatoes
- 1/3 c. chopped fresh basil
- 1-2 Tbs balsamic vinegar
- 1 1/2-2 Tbs olive oil
- Salt to taste
Instructions
- Sprinkle chopped tomatoes with a little salt and let drain in strainer 30 minutes to 1 hour.
- Press out more water if tomatoes are watery. Combine all ingredients. Let sit 30 minutes or so. Serve at room temperature.
